Everything from scratch...even hummus!

For "Valentine's Day", our girlfriends decided to celebrate "Galentine's Day". Danielle brought a fresh baguette from Parc and two bottles of Pinot Noir (our favorite), Katie stocked up on lots of cheese, Michelle obviously provided the dessert aka ChocAmo Cookie Cups, Julie brought a half eaten box of pita chips and forgot the hummus...

Good thing we found a can of chickpeas in our pantry closet, because we were able to quickly save "Galentine's Day" (and Julie's embarrassment) and whip up some from scratch.

First, drain the chickpeas and dump them into a blender with a 1/2 cup of water. Blend until it begins to smoothen out. Squeeze out 1/2 a lemon or lime, add 3-5 tablespoons of extra virgin olive oil and season with salt & pepper to your liking.

Continue to blend mixture until fully smooth (add tablespoons of water as needed to ensure the mixture is fully smooth), then throw in a bushel of cilantro and finish with a light blend.

Scoop the hummus into a bowl and draw a swirl using the back of a spoon. Then drizzle olive oil on top and lastly sprinkle with za'atar spice. 

Our homemade hummus was gone in seconds, so as grandma always says, "Everything tastes better when it's made from scratch!

Ingredients

1 can of chickpeas

1 bushel of cilantro

Extra Virgin Olive Oil

½ lemon or lime

Pink Himalayan Salt

Black Pepper
